I dedicate my first post to all you football fans, of which there seems to be a lot of in Tampa. Even those who are not football fans (like me) can enjoy this special time of year. Why? Because it is just another excuse to eat good food and drink excessively.
One of my favorite Super Bowl recipes is Shrimp and Mascarpone Stuffed, Pancetta Wrapped, Jalapenos.
Mmmmmmmmmmmmmmmmm. The recipe is super easy and you can make them ahead of the game.
Shrimp and Mascarpone Stuffed, Pancetta Wrapped, Jalapenos
- 8 large jalapenos
- 8 medium shrimp, shelled, deveined
- 1 pkg Mascarpone cheese (room temperature)
- 1 cup cheddar cheese
- dash of garlic powder
- dash of salt
- dash of Cumin
- 4 good grinds of Black Peppercorn
- 4 slices Pancetta
Split jalapenos in half, length wise, and remove the seeds. Mix Cheeses (with a fork or in food processor) and add spices. Mix very well.
Stuff peppers with cheese mix, then top each Pepper with one raw shrimp. Unwind Pancetta. Cut into Half. Wrap each Pepper with ½ slice of Pancetta. Secure with toothpicks, if needed.
Place Peppers on a hot grill with cheese side up. Close lid and grill for 10-15 minutes. Shrimp should be completely pink and opaque. If you can’t grill, bake at 450 till shrimp are opaque and Pancetta is crisp. 10-15 minutes.

And there is nothing wrong with that Steve. A plate full will suffice any hungry football crowd, but making them yourself would be even better.
